Soloact's EXcess Treats

Recipe:
Ingredients ( note : all amounts are approximate, and can be adjusted to your taste ) :
1 cup instant rice
1 cup water (bottled spring water recommended)
1/4 cup of pure coconut oil
1 cup instant oats
cinnamon for sprinkling
3/4 cup creamy peanut butter
1/2 cup brown sugar
3/4 cup semi-sweet chocolate chips
3/4 cup butterscotch chips
1 bag (approx 10 crackers) graham crackers
Note, all mixing should be done using a spoon. Wooden spoon not recommended.
Start with:
1 cup instant rice
1 cup water
Cook water and rice in microwave according to instructions. When done, keep covered and let it sit for 4-5 minutes then stir in
1/4 cup of pure coconut oil (if it's thick and spreadable, that's okay)
1 cup of instant oats
Keep stirring. It may get too hard to stir, but keep going. If it doesn't stir, but clumps, then add a little bit of water to make it thick-stirable.
When oats are stirred in, sprinkle cinnamon lightly across the top, then stir in
3/4 cup of soft peanut butter
1/2 cup of brown sugar
Once all of that is stirred in, then pop back into microwave for 1-2 minutes to heat and soften.
Then mix in
about 1-1/2 cups of a mixture of chocolate chips and butterscotch chips
until they melt and are thoroughly absorbed into the mixture.
Take a pie pan, or square cake pan, and crumble a small layer of
graham crackers
on the bottom.
Then spoon in about half of the mixture and spread it across the layer of graham cracker crumb layer.
Then make another layer of graham cracker crumbs,
then spread the rest of the mixture across that layer of crumbs,
then top with another layer of graham cracker crumbs.
Lightly press down to make sure that all layers stick well with each other.
Set aside to cool.
Refrigerate after it is no longer warm to the touch.
The amounts of ingredients listed makes a total of about 7-1/2" square by about 1-1/4" deep.
Can be divided up as desired.Recommended size would be approx 1.5 inch x 1.5 inch squares, for approx 160-180 calories per square.

I'd like to try this recipe sometime.
I cheated, though, and used instant rice
and instant oats
I gave away the last of the batch yesterday. I think that with the next batch, I'll also blend the rice. Although these tasted great, the texture was a bit off. The rice gave it a "gummy bear" feel to it.
